Ingredients:
1 cup Urban Accents Siam Jasmine Rice
1-1/2 cups coconut nectar*
1/2 cup water
1/4 cup shredded coconut
1/4 tsp turmeric
1 mango, peeled & diced
2 tsp Urban Accents Caribbean Peppered Seasoned Salt
Directions:
Combine rice, coconut nectar, & water into a medium saucepan; bring to a boil. Reduce heat to low, cover and simmer for 18 minutes. While rice is simmering, spread the coconut on a cookie sheet and broil in the oven until golden brown (careful! this happens quickly). To the cooked rice, add mango, turmeric and Caribbean Peppered seasoned salt. Top with toasted coconut & serve.
*Coconut milk can be used as well. The nectar adds a stronger flavor.
