Ingredients:
4 large leeks, thickly sliced
1 Tbsp Urban Accents Parisian Melange
2 eggs, lightly beaten
2 slices of bread soaked in water
Bread crumbs
Parmesan cheese
Salt and pepper
vegetable oil for shallow frying
Directions:
In a pot of salted water, boil the leeks for 5 minutes until tender and bright green. Drain, pat dry, and let cool. Chop the leeks coarsely then place in a bowl; add Parisian Melange, eggs and bread slices. Add the desired amount of Parmesan cheese (suggested amount 1/4 cup) and then add the bread crumbs until the mixture comes together. Salt and pepper to taste.
In a large skillet, heat the vegetable oil over medium heat. Form the leek mixture into balls and place in the oil. Using a spatula flatten the ball. Fry for about 3-4 minutes per side. Serve warm.
