Italian Bruschetta
Topped with a ricotta-based mixture of herbs, tomatoes & olives.

Ingredients:

1 1-lb loaf ciabatta, cut into 1-inch wide slices
1/4 cup extra-virgin olive oil
1 15-oz whole milk ricotta
2 large diced tomatoes
2 Tbsp Kalamata olives, chopped
1/2 tsp Kosher salt
1/2 tsp Urban Accents Sonoma Pepper
1/2 lemon
1-1/2 tsp Urban Accents Roma
3 Tbsp basil leaves, chopped


Directions:

Preheat grill to medium-high heat, or use the broil setting on your oven. Drizzle the bread with the olive oil, then place on preheated grill or in your oven. Grill or broil until golden brown, about 2 to 3 minutes per side.

In a medium bowl, combine ricotta, tomatoes, olives, basil, Kosher salt and Sonoma Pepper.  Squeeze lemon over the bread. Sprinkle bread with Roma and salt and pepper, to taste.  Place ricotta mixture on top of the grilled bread, garnish with basil leaves. Enjoy!
