Ingredients:
2 Tbsp extra-virgin coconut oil
2 large (1.4 lbs) chicken breasts, bone in, skin on
Extra virgin olive oil
1-1/2 tsp
Urban Accents Cajun Street2-1/2 tsp
Urban Accents Curry RowSea salt and freshly ground black pepper
1-1/2 pounds crimini mushrooms, stemmed and quartered
2 large white onions, quartered
1 14-oz unsweetened coconut milk
Directions:
Preheat oven to 400 F. Prepare a 9" x 13" baking pan using the coconut oil; set aside. Drizzle olive oil on both sides of chicken breasts, and season with layers of Cajun Street and Curry Row; then salt and pepper. Place chicken, skin side up, in baking pan; surround with mushrooms and onions leaving tops of chicken exposed. Pour coconut milk over mushroom mixture and sprinkle with salt and pepper and a few extra sprinkles of Cajun Street and Curry Row.
Bake for about 1 hour or until skin on chicken is somewhat crispy and mushroom mixture has cooked down into a golden colored sauce. Serve sauce over brown rice, if desired.
