Ingredients:
1 lb fresh green beans, cleaned & trimmed
1/2 small red onion, thinly sliced
2 Tbsp balsamic vinegar
3 tsp
Urban Accents Normandy Fine Herbs1 pint grape tomatoes
1 lemon, juiced
Salt and pepper to taste
Directions:
Fill large saucepan with water; bring to boil. Add green beans; blanch for 3-4 minutes, drain and rinse with cold water to stop cooking process. In small bowl combine red onion, vinegar and 1 tsp Normandy Fine Herbs; chill for 30 minutes. In the meantime, slice the grape tomatoes in half. Place dry green beans and grape tomatoes in serving bowl; gently toss with lemon juice and 2 tsp Normandy Fine Herbs. Add onion mixture; toss and serve.
