Ingredients:
3 lbs small boiling potatoes, scrubbed & cut into quarters
3 Tbsp lemon juice
1/4 cup red wine vinegar
1/2 tsp Dijon mustard
2/3 cup olive oil
4 Tbsp Normandy Fine Herbs
Kosher salt and pepper
1 bunch green onions, thinly sliced
Directions:
Steam potatoes for 15-20 minutes until tender but firm. Let cool. While potatoes are cooking, whisk together lemon juice, vinegar, mustard, olive oil, Normandy Fine Herbs, 2 tsp salt and 3/4 tsp pepper; let mixture sit for at least 1 hour so that flavors can meld. Place cooled potatoes and green onions in large bowl; pour enough dressing over mixture to moisten. Toss gently and salt and pepper to taste.
