Ingredients:
1/2 cup olive oil
1/2 tsp cumin seeds
1-1/2 cups chopped onions
4 cloves garlic, chopped
2 tsp chopped fresh ginger
2 cups chopped green bell pepper
1 lb beef stew chunks
2 Tbsp Easy Exotic™ Afro-Caribbean spice blend
1 28-oz can tomatoes
sea salt (to taste)
1 15-oz can white beans or black eyed peas, drained & rinsed
1 cup freshly chopped parsley or coriander
2 ripe lemons or lime for juice
1/2 tsp red crushed chili flakes (optional)
Directions:
Heat the oil on medium heat in a deep skillet or stew pot. Add the cumin seeds and when they start sizzling, add the onions, garlic, ginger, and bell peppers. Saute for 5 minutes. Once onions are glassy and a bit golden, add the beef chunks and stir to brown for 5 more minutes. Add the Afro-Caribbean spice blend.
Add the tomatoes and an additional can full of water and stir. Bring to a gentle boil and then reduce heat, simmering covered for about 20 minutes. Stir every 5 minutes or so. Additional water can be added if desired. Add the drained beans and salt to taste, approx. 1/2 tsp.
Add the parsley and the lemon or lime juice. Finish with chili flakes or more Afro-Caribbean spice for zing! Serve hot.
