Halibut with Mushroom Olive Sauce

Ingredients:

4 1-inch thick halibut fillets, about 8-oz each
4 tsp fresh lemon juice
2 Tbsp olive oil
1 onion, chopped
1/2 lb mushrooms, chopped
1 red bell pepper, chopped
12 pimiento-stuffed green olives chopped
2 1/2 tsp Urban Accents Charleston Char


Directions:

Preheat oven to 375 degrees Fahrenheit. Spray 10-inch baking dish with non-stick spray. Place halibut in baking dish; drizzle lemon juice over halibut and sprinkle with 1 tsp Charleston Char. Heat oil in medium nonstick skillet over medium-high heat. Add onions, mushrooms and bell pepper; saute until crisp-tender, about 6 minutes. Add olives and 1-1/2 tsp Charleston Char; stir and cook another minute. Spread mixture over halibut. Bake uncovered until halibut is cooked through, about 20 minutes.
