Halibut, Red Pepper & Onion Kabobs

Hearty seasoning, accented with the freshness of lime, make these the perfect summertime seafood kabobs.

Ingredients:

1/2 cup fresh lime juice
4 Tbsp extra-virgin olive oil, divided
3 Tbsp fresh cilantro, finely chopped
2 Tbsp Urban Accents Kodiak Fish & Game
1-1/2 lbs halibut steaks, skin removed and cut into 1-inch cubes
1 large red bell pepper, seeded and cut into 1-inch squares
1 large red onion, cut into 1-inch squares


Directions:

Combine lime juice, 2 Tbsp olive oil, cilantro and Kodiak Fish & Game in medium bowl.  Add halibut, cover and marinate in refrigerator for 30 minutes.  Do not marinate for longer than 30 minutes as the acidity in the lime juice will "cook" the fish.  Meanwhile, place red pepper and onion in small bowl and toss with remaining 2 Tbsp olive oil so each piece is well coated.


Preheat grill for medium-high heat.  On metal skewers or bamboo skewers, that have soaked for one hour in water, thread halibut pieces and vegetables, alternating as you go.  Grill on each of the 4 sides for about 2 minutes per side, approximately 8 minutes total or until halibut is opaque and flaky through to the middle.  Remove from grill and serve immediately.
