Ingredients:
1 lb boneless, skinless chicken breasts 5 Tbsp extra-virgin olive oil, divided 4 tsp Urban Accents Marrakesh Za'atar, divided 1 lb pizza dough or prepared 12-inch thin pizza crust 2 cup shredded mozzarella cheese 1-1/2 cups chopped fresh vegetables, such as cucumbers, red onion, tomatoes & parsley 1/2 cup pitted Kalamata olives, halved 1/2 cup crumbled feta cheese 2-3 Tbsp chopped fresh parsley
Directions: Preheat grill to medium heat. Lightly coat chicken breasts with 2 Tbsp oil. Sprinkle both sides of chicken with 3 tsp Marrakesh Za'atar. Grill for 5-7 min per side until chicken is cooked through. Remove to cutting board; let rest for 5 min and cut into bite-size cubes. In small bowl mix 2 Tbsp oil with 1 tsp Marrakesh Za'atar.
If using dough, stretch or roll dough on floured surface to form two 10-inch discs, about 1/4-inch thick. Brush top of dough discs or prepared crusts with 1 Tbsp oil; place disc oil-side down on grill and close lid. Grill over med heat 1-2 minutes or until grill marks appear on the bottom of the crust. Carefully flip crust over using tongs or spatula. Brush this side of crust with spiced oil mixture. Sprinkle evenly with Mozzarella cheese. Top with grilled chicken chunks, chopped vegetables and olives. Close lid and grill 3-4 min longer or until cheese melts and crust is light brown. Check often to avoid burning. Slide cooked pizza onto baking sheet. Sprinkle with feta cheese and parsley. Slice and serve immediately.
