Ingredients:
Whole pineapple, skin removed & cut into 1-inch thick slices
Juice and zest of one lime

1 cup sugar
1 cup dark brown sugar
3/4 cup rice wine vinegar
1 small onion, thinly sliced
2 Tbsp finely chopped ginger
5 garlic cloves, finely chopped
1 cup golden raisins
2 tsp mustard seed
1-1/2 tsp kosher salt
1 large red bell pepper, thinly sliced
1 red chili pepper, finely chopped
4 bone-in chicken breasts
4 tsp Urban Accents Montego Bite
Directions:
Prepare grill for med-high heat. In large bowl, combine lime juice and zest with Fiery Pineapple Fruit Grillers seasoning. Add pineapple; stir and marinade for 15 min. Grill pineapple on all side to get slightly grilled grill marks. Let pineapple cool slightly and cut into chunks..
In a med saucepan over med-high heat, dissolve sugars with vinegar. Once mixture comes to a boil, add onion, ginger, garlic, raisins, mustard seed, salt, red pepper, red chili pepper and pineapple. Reduce heat and simmer, stirring often, until mixture thickens about 1 hour. Set aside to cool.
Preheat grill to med-high heat. Sprinkle Montego Bite on dry chicken breasts; allow to marinate for 15 min. Grill for 10-15 minutes. Serve with Pineapple Chutney.
