Green Rice
Spiced up with poblano peppers, cilantro and parsley.

1 cup Urban Accents Siam Jasmine Rice
1-1/3 cups chicken or vegetable stock
2 poblano peppers (or any other "hot" pepper variety), seeded and chopped
1/2 green pepper, chopped
3 garlic cloves, minced
1/2 cup cilantro
1/2 cup parsley
1/4 cup vegetable oil
1/2 cup yellow onion, chopped
Salt and pepper


Combine chilies, peppers, garlic, cilantro and parsley in food processor or blender and puree; set aside for future use. Heat oil in medium saucepan over medium to high heat.  Add onion and saute until translucent. Add rice and stir to coat.  Add puree mixture; cook about 2 minutes.  Add stock and bring to a boil; reduce heat to a low simmer. Cover and simmer 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with fork. Salt and pepper to taste. Garnish with fresh parsley leaves and enjoy.
