Ingredients:
1/2 lb green beans, trimmed
2 Tbsp chopped walnuts
2 tsp
Urban Accents Mushroom Truffle Hunt 2 Tbsp flat-leaf parsley, finely chopped
2 Tbsp red onion, chopped
2 tsp extra-virgin olive oil
1 tsp red wine vinegar
1 tsp Dijon mustard
Directions:
IBring a large pot of water, with steamer basket, to a boil; add green beans and steam for about 4 minutes. Transfer to a serving bowl.
In small dry skillet, toast walnuts and Mushroom Truffle Hunt over medium heat until they become fragrant, about 2 minutes. Transfer walnuts to a small bowl to cool. Add parsley and onion to the walnut mixture. Stir until thoroughly combined.
In another small bowl, whisk together olive oil, vinegar, and mustard. Toss the dressing and green beans; top with walnut mixture and season to taste salt and pepper.
