Ingredients:
1 red onion
3 red bell peppers
2 seedless cucumbers
1 46-oz V8 juice, low-sodium
4 Tbsp
Urban Accents Spicy Bloody Mary Drink Mix 1/2 cup flat leaf parsley, roughly chopped, plus additional for garnish
1/2 cup red wine vinegar
For extra spicy flavor, add 1 jalapeno, finely diced
Sour cream or plain yogurt & homemade croutons (recipe below), as garnish
Directions:
Finely dice by hand or pulse in food processor red onion, bell peppers and cucumber. Pour juice into large stockpot; add Bloody Mary Drink Mix seasoning and mix well. Add diced vegetables (including jalapeno), parsley and vinegar. Puree using an immersion blender or puree in batches in a blender. For a chunkier texture: only add half of vegetables before puree process, then stir in remaining vegetables. Chill for at least 4 hours.
When ready to serve, ladle soup into chilled bowls and garnish with dollop of sour cream or plain yogurt and additional chopped parsley and croutons.

Urban Accents Fisherman's Wharf Cut bread into small crouton sized squares. Add to medium sized skillet with a drizzle of olive oil & Fisherman's Wharf. Grill until light brown and crispy on all sides.
