French Couscous

Accented with Brie… this is an “oh so delicious” side dish!

Ingredients:

1 Tbsp butter
1 Tbsp olive oil
1/2 cup finely chopped onion
1 garlic clove, minced
4 oz Brie cheese
1 cup Urban Accents Traditional Couscous
2 Tbsp chopped fresh parsley


Directions:


Place Brie in freezer so it's easier to dice -- be sure to leave it in there for only 20 minutes!  Meanwhile, in heavy skillet, heat butter and oil over med heat.  Cook onion and garlic until crisp tender.
 
Take Brie out of freezer and remove skin; dice into small pieces. Combine couscous with 1-1/2 cups water or chicken stock in med saucepan and bring to a boil.  Remove from heat, cover and let stand for 5 min.  Remove cover and fluff with fork.  Add cooked onion mixture, Brie and parsley to saucepan.  Toss gently so that cheese melts.  Serve immediately.
