Emperor's Rice Medley
Rice salad accented with colorful peppers and roasted sweet potatoes.

Ingredients:

2 cups Urban Accents Emperor's Chinese Black Rice
3-1/2 cups water
3 Tbsp sesame oil
2 Tbsp Urban Accents Thai Garden
2 Tbsp honey
1 lb roasted sweet potatoes, diced
1-1/2 cups red & yellow peppers, diced
1/2 bunch sliced scallions


Directions:

Rinse rice well.  Bring rice, water & pinch of salt to a boil. Cover & simmer for 25 minutes. In small bowl, whisk together sesame oil, Thai Garden and honey. Combine cooked rice and oil mixture.  Let cool.  Add sweet potatoes, peppers, scallions, and salt and pepper to taste. (Caution: if the sweet potatoes, peppers, and scallions are added too early, they will stain purple!)
