Duck with Plum Sauce

Ingredients: 4 duck quarters 1 large red onion, chopped 1-1/4 lb ripe red plums, pitted and quartered 1 Tbsp Urban Accents Thai Garden 2 Tbsp red currant jelly Salt and pepper to taste
Directions: Using a fork, pierce the duck all over. This will help release some of the fat during cooking. In a large skillet, add the duck, skin side down. Cook the duck over medium heat for 10 minutes on each side, until golden brown and cooked through. Set aside and cover with foil to keep warm. Remove all but 2 Tbsp of duck fat. Add the onion and saute until golden, approximately 5 minutes. Add plums and Thai Garden. Stirring frequently, cook for 5 minutes. Add the jelly and mix well. Put the duck back into the mixture and cook for an additional 5 minutes, coating the duck in the plum sauce. Season with salt and pepper to taste.
