  • Rub 2-3 pounds of meat or seafood with oil and place in a resealable bag.
  • Empty packet of Cayman Citrus DRYGLAZE seasoning into bag.
  • Seal bag and gently shake for even coating.
  • Let set for 30 minutes to create a beautiful glaze.
  • For grilling: Use indirect heat.
  • For roasting: Cover with foil and roast as usual. Remove foil halfway through cooking to brown.

I absolutely love the Cayman Citrus Dryglaze on grilled shrimp - this has become my go to treat for the 4th of July.  Not for the meek - it's got real heat.  Can't wait to try it on scallops.

Have used this since moving from Ca to Az, would like to find it here in the Phoenix area. I like to put it on raw wild shrimp then cover it until cooking or grilling-gives it just enough sweet hot flavor. Guests have raved about it.

Try on scallops! April 16, 2010

I used Cayman Citrus on scallops (first time cooking scallops) and it was amazing.  Sweet, spicy, with a bit of fresh lime juice.  I will definitely try another flavor on local seafood.  Any recommendations?
