Ingredients:
8 eggs
6 scallions, finely chopped
5 Tbsp mayonnaise
2 tsp wholegrain mustard
2 tsp Urban Accents Dillwood Grove
Salt & Pepper to taste
Directions:
Place eggs in a large saucepan and cover with cold water. Bring to a boil; simmer for 2 min. Remove from heat, cover and let sit for 13 min. Run cold water over the eggs for 2 min, then remove from pot. When cool, remove the shells. Dry the eggs and chop coarsely. Place all ingredients in a large bowl. Stir until combined and chill for 30 minutes. Serve as a sandwich filling or on crackers.
