Curry Orchard Chicken
A yummy comfort dish with raisins, pears and apples.

Ingredients:

2 lbs boneless, skinless chicken breasts
1-1/2 Tbsp extra-virgin olive oil
1 cup onions, diced
2 cloves garlic, minced
1 cup golden raisins
1 cup firm pear, diced
1 cup Granny Smith apple, diced
2 cups chicken stock
4 Tbsp Major Grey's Chutney, or similar
2 Tbsp Urban Accents Curry Row


Directions:

Preheat oven to 325 degrees Fahrenheit. Heat olive oil in skillet over medium-high heat. Add chicken breasts. Cook until golden brown, about 4 minutes per side. Remove from pan and let cool. Dice into 1" chunks. Return pan to medium heat. Saute onion and garlic until soft.  Place chicken, onion mixture and remaining ingredients into ovenproof casserole dish. Cover and bake for one hour. Add more chicken stock if mixture appears too dry. Remove from oven and serve over cooked rice.
