Urban Accents Coast to Coast All-in-1 3 Tbsp pine nuts, finely chopped
2 lb beef tenderloin
1 Tbsp vegetable oil
Directions:
Let beef stand at room temperature, covered, for 1 hour before roasting. Position rack in center of oven and preheat oven to 425 degrees F. In small bowl, combine Coast to Coast All-in-1 and pine nuts; and press evenly over surface of beef tenderloin roast. Heat oil in large ovenproof skillet over medium-high heat. Brown tenderloin on all sides, reducing heat if oil begins to smoke. Transfer skillet to oven and roast until instant-read thermometer inserted into thickest part of meat registers 125 degrees F for med-rare (135 degrees F to 140 degrees F in thinnest part), about 20-25 minutes. Remove roast from oven, transfer to a carving board. Cover with foil and let rest 15 minutes before slicing.
