Cajun Potato Wedges
Kick-up the flavor of roasted potatoes!

Ingredients:

4 large baking potatoes, well scrubbed
1/3 cup extra-virgin olive oil
4 Tbsp Urban Accents Cajun Street


Directions:

Preheat oven to 400F.  Line baking sheet with foil. Stab potatoes 2-3 times with fork. Microwave potatoes for up to 10 minutes or until almost fully cooked. Let potatoes cool. Cut lengthwise into fourths or sixths. Combine oil and Cajun Street in a small bowl. Generously brush flesh of potato with mixture and place on baking sheet. Bake for 30 to 50 minutes, or until they reach the desired degree of crispness. Can be prepared and refrigerated for up to one day, before final baking.
