Ingredients:
1 cup Urban Accents Traditional Couscous
1/2 tsp salt
3 tsp fresh lemon juice
1/3 cup extra-virgin olive oil
1/3 cup
Urban Accents Dillwood Grove1 6-oz bag baby spinach
3 green onions, sliced thin
Directions:
Combine couscous with 1-1/2 cups water and salt in a med saucepan and bring to a boil. Remove from heat, cover and let stand for 5 min. Fluff couscous with a fork and transfer to a bowl. Stir in lemon juice, oil, Dillwood Grove and salt and pepper to taste. Let cool completely. Toss with spinach and green onions.
Add cooked chicken or shrimp for a main course salad.
