Ingredients:
1 cup Urban Accents Traditional Couscous 3 cups cooked couscous 1 cup sliced zucchini 1 14-oz can garbanzo beans, drained and rinsed 1 red bell pepper, chopped 2 green onions, sliced 1 cup Greek yogurt 2 Tbsp olive oil 1-1/2 tsp Urban Accents Curry Row 1/2 tsp salt 1/8 tsp pepper
Directions: Combine couscous with 1-1/2 cups water in med saucepan and bring to a boil. Remove from heat, cover, and let stand for 5 min. In large bowl, combine cooked couscous, zucchini, garbanzo beans, bell pepper, and green onions. In small bowl, combine remaining ingredients; mix well. Stir dressing into vegetable mixture; cover and refrigerate at least 2 hours before serving.
