Ingredients:
2 1/4 cups water
1 10-oz box unflavored couscous
1/2 tsp salt
3 tsp fresh lemon juice
1/3 cup extra-virgin olive oil
1/3 cup
Urban Accents Dillwood Grove1 6-oz bag baby spinach
3 green onions, sliced thin
Directions:
Bring water to a boil, stir in couscous and salt. Cover and let simmer until liquid is gone. Remove from heat, and let stand covered for 5 minutes. Fluff couscous with a fork and transfer to a bowl. Stir in lemon juice, oil, Dillwood Grove and salt and pepper to taste. Let cool completely. Toss with spinach and green onions.
Add cooked chicken or shrimp for a main course salad.
