Coconut Rice

1-1/2 cups Urban Accents Siam Jasmine Rice
1-1/2 cups coconut milk
1-1/2 cups water
1/2 tsp coriander
1 cinnamon stick
1 lemongrass stalk
1 bay leaf
Coconut, toasted, for garnish


Place rice, milk, water, coriander, cinnamon, lemongrass and bay leaf in medium saucepan. Bring to a boil, lower heat to simmer. Cover and simmer 8-10 minutes. Once the liquid has been absorbed, fork through the rice to fluff grains as well as remove the lemongrass, cinnamon and bay leaf.  Recover the pan and continue to cook over the lowest possible heat for an additional 3 minutes. Salt and pepper to taste. Garnish with toasted coconut and lemongrass and ENJOY. (To toast coconut, place about 1/4 cup coconut in large skillet over medium heat until golden brown and fragrant.)
