Ingredients:
1/3 cup white sugar
1-1/2 Tbsp Urban Accents Mesa Rosa Chipotle
2 Tbsp butter
2 Tbsp honey
1 lb skinless peanuts
Directions:
Preheat oven to 325°F. In small bowl, stir together sugar and Mesa Rosa Chipotle; set aside. Coat a 9” x 13” rimmed baking sheet with non-stick spray. In large saucepan over medium heat, stir together butter and honey until butter has melted and mixture is bubbly. Stir in the peanuts until well coated, then pour out into baking pan.
Bake until nuts are golden brown, about 30 minutes. Stir mixture 2-3 times to ensure even cooking. Scrape peanuts into a large metal or ceramic bowl and sprinkle with spiced sugar mixture. Toss peanuts so they are evenly coated with spice mixture. All the peanuts to cool to room temperature, tossing every few minutes so the nuts do not stick together. Store at room temperature in air-tight container.
