Ingredients:
3 Tbsp extra-virgin olive oil
1 cup onion, chopped
2 cloves garlic, chopped
1 cup mushrooms, sliced
1 cup
Urban Accents Emperor's Chinese Black Rice 2 cups vegetable stock
1/2 cup white wine
2 sprigs thyme
1 bay leaf
Directions:
Heat oil in medium saucepan over medium-high heat. Add onion and garlic; saute until translucent. Add mushrooms and saute until soft. Add rice and stir to coat with mushrooms. Add white wine and cook down for about 2 minutes. Add thyme and bay leaf. Reduce heat to medium, and add 1 cup of stock. Simmer, uncovered until stock is absorbed. Add remaining stock and simmer until absorbed and rice is tender. Remove from heat. Remove bay leaf and thyme sprigs, if possible. Salt and pepper to taste. ENJOY!
