Ingredients:
1-1/2 cups Urban Accents Whole Wheat Couscous 1 pint cherry tomatoes, halved 1 medium cucumber, peeled and cut into 1/4-inch pieces 1 14-oz can chickpeas, rinsed and drained well Juice of one lemon Juice of one lime 1/4 cup extra-virgin olive oil Kosher salt and pepper 1/3 cup basil or cilantro, chopped 1/3 cup feta cheese, crumbled
Directions: Combine couscous with 2-1/4 cups water in med saucepan and bring to a boil. Remove from heat, cover and let stand for 5 min. Fluff with a fork. In a large bowl, combine couscous, tomatoes, cucumber and chickpeas. In small bowl, whisk together lemon and lime juice, oil and salt and pepper to taste. Pour over couscous mixture; stir gently and check seasoning, this may need a generous amount of salt depending on juiciness of citrus. Add basil and feta and toss gently until it is evenly dispersed.
