Hot off the grill

Ingredients:

Juice of one orange
Juice and zest of one lime
1 Tbsp Urban Accents Cayman Citrus Dryglaze
Fresh pineapple slices, 3/8 to 1/2-inch thick
1-1/2 lbs lean ground beef or chuck
1-1/2 Tbsp Urban Accents Caribbean Burger Blend
Mild cheese slices, such as Muenster

Directions:

In large glass baking dish, combine orange juice, lime juice and zest and Cayman Citrus Dryglaze (start with 1 Tbsp, taste marinade, and work up to match your own personal spicy factor).  Add pineapple slices and toss gently to evenly coat pineapple.  Let pineapple marinade for 15 minutes, turning over once or twice.

Preheat grill to medium-high heat; oil grate with non-stick spray or olive oil.  In medium bowl, combine beef and Caribbean Burger Blend; do not over mix.   Divide mixture into four portions, ball lightly and then flatten into patties.  Place pineapple slices and burgers on grill.   Cook pineapple on both sides to get slightly charred grilled marks.  Cook burgers for about for about 10-12 minutes, turning only once, until internal temperature reaches 160F.  Place cheese slices on burgers for last minute so that it melts.  To serve, place burgers on your favorite buns and top each with slice of pineapple and your favorite condiments (a little spicy barbecue sauce is all you may need).
