6 Tbsp unsalted butter
3 lbs medium sweet potatoes, peeled, cut lengthwise, each half cut into 4 wedges
1/2 cup orange juice
1/2 cup light brown sugar
2 Tbsp Urban Accents Yummy Yams
In large saute pan over medium-high heat, melt butter. Add potato wedges; stir until all sides are coated with butter. Add 2 cups water and orange juice; cover, and cook until potatoes are fork-tender, about 5 min. Remover cover, reduce heat to medium and continue cooking, tossing occasionally, until most of liquid had evaporated, about 3-4 min. In small bowl, combine brown sugar and Yummy Yams seasoning. Sprinkle over potatoes, tossing until well coated. Continue cooking until sugar starts to form caramelized bubbles and browns around edges of potatoes, about 5-6 min. Toss occasionally during this final cooking period. Serve immediately..
