Buffalo Blue Grilled Chicken Pizza
Nice and spicy... with a kick of blue cheese!

Ingredients:

1 lb boneless, skinless chicken breasts
2 tsp Urban Accents Bayou Barbeque
1 8-oz tomato sauce
1-2 tsp Urban Accents San Juan Sazon (depending on spiciness preference)
1 lb pizza dough or prepared 12-inch thin pizza crusts
1 Tbsp olive oil
1-1/3 cups shredded mozzarella cheese, divided
1/2 cup diced red onion
2/3 cup crumbled blue cheese



Directions:

Preheat grill to medium heat.  Sprinkle both sides of chicken with Bayou Barbeque. Grill for 5-7 min per side until chicken is cooked through.  Remove to cutting board; let rest for 5 min and cut into thin strips.  In small bowl, combine tomato sauce with San Juan Sazon.  Taste sauce to determine spicy preference. 

If using dough, stretch or roll dough on floured surface to form two 10-inch discs, about 1/4-inch thick.  Brush top of dough discs or prepared crusts with oil; place disc oil-side down on grill and close lid.  Grill over med heat 1-2 minutes or until grill marks appear on the bottom of the crust. Carefully flip crust over using tongs or spatula. 

Spread seasoned tomato sauce on crust. Layer with 1/2 of the mozzarella cheese, chicken strips, onion, remaining mozzarella cheese and blue cheese.  Make sure cheese is evenly spread so that it melts easily.  Close lid. Grill 3 to 4 minutes longer or until cheese is melted and crust is browned. Check often to avoid burning. Slide pizza onto baking sheet; slice and serve immediately.
