Ingredients:
1-1/4 lb lean ground beef
1/2 lb ground pork
1 small celery rib with leaves, finely chopped
1/2 cup bread crumbs
1 egg, lightly beaten
1/2 cup V-8 juice
4 Tbsp
Urban Accents Spicy Bloody Mary Drink Mix2 tsp prepared horseradish
1 tsp celery salt
1/2 tsp pepper
Directions:
Preheat oven to 350F. In large bowl, combine the beef and pork with celery, bread crumbs and egg. In small bowl, combine V-8 juice, Bloody Mary Drink Mix, horseradish to taste, celery salt and pepper. Pour liquid into large bowl and mix lightly, but thoroughly.
Shape mixture into 9 x 4 loaf and place on rack placed in rimmed baking sheet. Bake for 65-70 minutes to medium (160) doneness, until not pink in center and juices run clear. Let meatloaf rest for 10 minutes on cutting board before serving
