Bloody Mary Cocktail Meatballs

Ingredients:

1-1/4 lb lean ground beef
1/2 lb ground pork
1 small celery rib with leaves, finely chopped, approx cup
1/2 cup bread crumbs
1 egg, lightly beaten
3/4 cup V-8 juice, low salt
4-5 Tbsp Urban Accents Spicy Bloody Mary Drink Mix (how spicy do you like your Bloody Mary cocktails)
2 oz (4 Tbsp) Absolut Citron or Absolut Peppar, if you like it spicy
1/2 tsp pepper
1 Tbsp vegetable oil



Directions:

In large bowl, combine the beef and pork with celery, bread crumbs and egg.  In small bowl, combine V-8 juice, Spicy Bloody Mary Drink Mix, Vodka, and pepper.  Pour 1/2 cup of liquid mixture into large bowl and mix lightly with meat mixture, but thoroughly.  Roll the meat mixture into 1-inch balls, packing them firmly together.  

Heat oil in a large nonstick skillet until shimmering.  Add the meatballs and cook over moderately high heat until browned all over, about 5 min.  Cook in batches if necessary; then return all cooked meatballs to skillet.  Add remaining liquid mixture and simmer over medium heat until liquid is reduced by half; gently stirring so all meatballs get covered with sauce, about 2 minutes.   Meatballs can be made ahead of time and refrigerated before cooking.
