Black Rice with Ginger and Sweet Potatoes
The best of both worlds...exotic rice and down-home sweet potatoes... delicious!

Ingredients:

2 cups vegetable stock
1 cup Urban Accents Emperor's Chinese Black Rice
2 Tbsp extra-virgin olive oil
1 bunch scallions, chopped
1 Tbsp ginger, minced
1 large sweet potato, peeled and diced
Salt and pepper



Directions:

In medium saucepan, bring stock and rice to a boil. Reduce heat to a simmer and cook covered for 30 minutes. While rice is cooking, heat oil in large saute pan and add scallions, ginger and sweet potatoes. Reduce heat and cook, covered, stirring occasionally, until potatoes are tender, about 12 minutes. When potatoes are tender, set aside until rice has finished cooking. Once the rice is done, combine with the potato/ginger mixture. Salt and pepper to taste. Garnish with chopped scallions and ENJOY.
