Black Rice with Ginger and Mushrooms
This exotic side dish is delicious with and meal.

2 Tbsp extra-virgin olive oil
2 shallots, minced
2 cloves garlic, minced
2 Tbsp ginger, minced
1/2 cup mushrooms, sliced
1 cup Urban Accents Emperor's Chinese Black Rice
2 Tbsp soy sauce
1/4 cup rice wine
1/2 tsp sugar
2 cups vegetable stock
Salt and pepper


In medium saucepan, heat oil over medium-high heat.  Add shallots, garlic, scallions and ginger; saute until fragrant.  Add mushrooms and saute until soft.  Add rice; stir to coat with mixture.  Add soy sauce, rice wine and sugar; allow mixture to cook down, stirring occasionally, about 2 minutes.  Add vegetable stock and bring to boil.  Cover, reduce heat to simmer and cook until rice is tender, about 30 minutes.  Salt and pepper to taste.  Garnish with chopped scallions and enjoy.
