Ingredients:
2 cups cooked white rice
2 Tbsp extra-virgin olive oil
½ cup onion, finely chopped
¼ cup green pepper, chopped
2 garlic cloves, minced
1 15-oz can black beans, undrained
¾ cup water
1 Tbsp Urban Accents San Juan Sazon
1 Tbsp cider vinegar
Directions:
Cook rice according to package directions. In separate saucepan, heat olive oil over med heat. Add onion, green pepper and garlic; cook until tender about 5-7 min. Stir in black beans, water San Juan Sazon and vinegar. Bring to a boil, reduce heat and simmer 10 minutes. Add cooked rice, stir and serve.
