Ingredients:
1 med red onion, diced
2 15-oz cans black beans, rinsed and drained
2 Tbsp fresh lime juice (1 lime)
1 Tbsp chopped cilantro, plus more for garnish
5 Tbsp Urban Accents Mesa Rosa Chipotle
Directions:
Place onion, one can of beans, lime juice, cilantro and Mesa Rosa in blender or food processor. Blend until smooth. Pour mixture into serving bowl; add reserved can of whole black beans and stir to combine. Garnish with additional sprigs of cilantro and serve with fresh cut veggies, pita chips or crackers. Refrigerate for at least 1 hour before serving.
