Ingredients:
2 14-oz cans black beans, rinsed and drained WELL, divided
1 egg, beaten
1/3 cup panko (Japanese bread crumbs)
2 Tbsp
Urban Accents Cajun Street1/4 cup finely chopped cilantro
1/2 cup grated cheese (if desired)
Vegetable oil
4 whole grain rolls
Suggested garnishes: sour cream, salsa, romaine lettuce
Directions:
Using a food processor, pulse one can of beans with egg, panko, and Cajun Street until a coarse puree is formed. Transfer mixture to a medium bowl; stir in remaining can of beans and cilantro. Divide mixture into four portions; ball lightly and flatten into patties. Place on platter, cover with plastic wrap and refrigerate before cooking for at least one hour.
Heat small amount of oil in non-stick skillet over medium-high heat. Cook burgers until they are warmed through and outsides are crisp and lightly browned, turning once; about 6-9 minutes. If desired, add grated cheese and cover last few minutes of cooking. You can also bake these burgers in 350 oven for 15 minutes, flipping once. Serve on rolls with sour cream, salsa and lettuce.
