Bamboo Rice with Water Chestnuts and Scallions
A delicious addition to your rice repertoire.

Ingredients:

2 Tbsp olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 bunch scallions, chopped
2 Tbsp soy sauce
1/4 cup rice wine vinegar
1 cup Urban Accents Yunnan Palace Bamboo rice
1 1/2 cups vegetable stock
1/2 cup water chestnuts, sliced
Salt & pepper to taste


Directions:

Heat oil in medium saucepan over med-high heat. Add onion, garlic and 1/2 of the scallions. Saute until translucent and fragrant. Add soy sauce and vinegar and cook down about 2 minutes. Add rice and stir to coat. Add stock and bring mixture to a boil. Add water chestnuts and reduce heat to low. Cover and simmer until liquid is absorbed and rice is tender, about 12 minutes. Salt and pepper to taste. Garnish with chopped scallions and enjoy.
