Ingredients:
2 Tbsp olive oil
1/2 onion, finely chopped
2 cloves garlic, minced
2 large shallots, minced
1 cup Urban Accents Yunnan Palace Bamboo Rice
1/4 cup white wine
1 bay leaf
1 1/2 cups vegetable stock
1/2 cup almonds, preferably slivers
1/2 cup dried pineapple
Salt & pepper to taste
Parsley sprig, for garnish
Directions:
Heat oil in medium saucepan over med-high heat. Add onion, garlic and shallots and saute until translucent. Add rice and stir to coat. Add white wine and bay leaf and cook for about 2 minutes. Add vegetable stock and bring to boil. Reduce heat to simmer and cook, covered until liquid is absorbed and rice is tender. While rice is cooking, toast almonds in large saute pan over high heat until golden brown. When rice has fully cooked, toss together with toasted almonds and dried pineapple. Salt and pepper to taste. Garnish with fresh parsley sprig and enjoy.
