Ingredients:
2 cups cooked Urban Accents Siam Jasmine Rice
1 7-oz can chopped green chilies, drained
1 lb Monterey Jack cheese, grated, divided
3 med zucchini, blanched 3 minutes, then sliced
2 large tomatoes, sliced
16 oz sour cream
1 1/2 tsp Urban Accents Fisherman's Wharf
2 Tbsp finely chopped green pepper
2 Tbsp finely chopped onion
Directions:
Preheat oven to 350 F. Spread rice evenly in greased 9" x 13" baking pan. Layer chilies over rice. Sprinkle two-thirds of cheese over chilies, followed by zucchini and tomatoes. In small bowl, mix sour cream, Fisherman's Wharf, green pepper and onion. Spread mixture over layer of tomatoes, lifting tomatoes lightly with fork to allow some sour cream mixture to seep in. Top with remaining cheese. Bake for 30 minutes.
