Ingredients:
1 lb boneless, skinless chicken breasts 4 tsp Urban Accents Bayou Barbeque, divided 1 8-oz tomato sauce 1 lb pizza dough or prepared 12-inch thin pizza crust 1 Tbsp olive oil 2 cups shredded mozzarella or Monterey Jack cheese, divided 1/2 cup thinly sliced red onion
Directions: Preheat grill to medium heat. Sprinkle both sides of chicken with 3 tsp Bayou Barbeque. Grill for 5-7 min until chicken is cooked through. Remove to cutting board; let rest for 5 min and cut into thin strips. In small bowl, combine tomato sauce with 1 tsp Bayou Barbeque.
If using dough, stretch or roll dough on floured surface to form two 10-inch discs, about 1/4-inch thick. Brush top of dough disc or prepared crust with 1 Tbsp oil; place disc oil-side down on grill and close lid. Grill over med heat 1-2 minutes or until grill marks appear on the bottom of the crust. Carefully flip crust over using tongs or spatula.
Spread seasoned tomato sauce on crust. Layer with 1/2 of cheese, chicken strips, onion and remaining cheese. Make sure cheese is evenly spread so that it melts easily. Close lid. Grill 3 to 4 minutes longer or until cheese is melted and crust is browned. Check often to avoid burning. Slide pizza onto baking sheet; slice and serve immediately.
