Asparagus in Lemon Thai Sauce

Ingredients: 1-1/2 lbs asparagus, trimmed 1 Tbsp cornstarch 2 egg yolks 2 tsp Urban Accents Thai Garden Juice and zest of one lemon Salt and pepper
Directions: In a large pot, cook the asparagus in boiling water for approximately 5-7 minutes until crisp-tender. Drain and place in a serving dish; cover and keep warm. Reserve 1 cup of the cooking liquid from the asparagus. Combine the cornstarch with the reserved liquid in a small pan. Bring to a boil, stirring constantly, and cook over gentle heat until thickened. Remove from heat and cool slightly. Beat the egg yolks with the lemon juice, zest, and Thai Garden. Slowly stir mixture in the cooled liquid. Over low heat, cook the sauce stirring constantly until thickened. Season with salt and pepper and spoon over asparagus.
