Argentina Lime Chicken

Ingredients: 2 Tbsp olive oil 2 Tbsp Urban Accents Argentina Steak Rub 1 lb boneless, skinless chicken breasts Juice of 2 limes 1 cup uncooked Urban Accents Raj Baby Basmati rice (or any white rice) Salt and pepper
Directions: In a small bowl, combine the oil and Argentina Steak Rub until well blended. Cut the chicken breasts into cubes and place in a resealable plastic bag seasoning mixture and the juice of 1-1/2 limes. Seal and mix to combine; marinate for at 20 minutes. Meanwhile, prepare the rice according to directions.
Over medium heat, add the chicken to a large skillet. Cook through, stirring often. Squeeze the remaining juice of the1/2 of lime juice and salt and pepper to taste while the chicken is still in the skillet. Serve over rice and enjoy!
